If one has a physical restriction that requires they sit in a chair for the sajdah portion of the prayer, would they still focus their eyes on where sajdah would be made if able to do so properly or would they focus their gaze on a point closer to where they are sitting during sajdah?

The rules for where the eyes should be, will remain connected to the posture one is adopting.
For example, a person standing for Qiyam (standing position) should look at the place of Sajdah. However, if the same person due to some uzr (excuse) has to sit and perform one’s salah, then even though theoretically one may be performing Qiyam, factually one is sitting, hence one will look at ones lap.
Consider the explanation provided in last question that the purpose of confining the gaze is to secure the focus. This is linked to the factual posture of the individual and not to the technical part of the salah.
Thus, if while doing Sajdah, or any other part of salah, if you have to sit on a chair, you will focus your gaze towards your lap, and not towards the sajdah position on the floor.
